  • Meanwhile, place the eggs, chopped cheese, chopped chives, flour, salt and pepper in a mixing bowl and stir until well mixed.
  • Remove excess liquid from the zucchini by squeezing it over the sink in a towel.
  • Finish the batter: Stir the drained zucchini until well combined with eggs and flour.
  • Cook the fritters: Heat the oil in a pan, then pour the batter into the pan with a large spoon. Flatten slightly and flip the pan with a spoon until it becomes golden, then flip it and cook from the other side as well.
  • Serve the fritters with sour cream. They are crispy hot out of the pan, so if you serve them at room temperature, they will soften, but they are still very tasty!

Tips for this easy zucchini recipe:

  • Do not skip draining excess water from the sliced zucchini, or your fritters will become messy and watery when cooking.
  • Season to your taste - I make them very light as I have young children, but feel free to add some warmth with chili flakes or lemon
  • Do not cook too many fritters at once (unless you have a big vessel), They do not crisp up and turn brown if the pan is overcooked.

Can I freeze zucchini fritters?

Yes, zucchini fritters are great for making ahead.

Once in a single layer on a baking sheet, flash-freeze the freeze at room temperature. Freeze for a few hours or until solidified.

Transfer to a freezer bag and keep in the freezer (freeze up to 3 months).

To reheat, place the frozen fritters in a 325 oven on a frying baking sheet until piping is hot all the way through.
