Easy Baked Parmesan Cheese Zucchini Recipe

The Easy Baked Parmesan Cheese Zucchini Recipe is the perfect side dish for just about any meal! The fresh zucchini of the garden is tossed with olive oil and herbs and poured with a pinch of Parmesan cheese.

Easy Baked Zucchini Recipe

Zucchini is one of my favorite vegetables to plant in my garden. It can be used in both sweet dishes (such as zucchini brownies or zucchini banana bread) and in savory dishes like Easy Stuffed Zucchini Boats!

When making this baked zucchini recipe, everything can be prepared well in advance and when dinner is almost ready, just place it in the oven for a few minutes.

Makes 4 Servings


  • 2 medium zucchini sliced into ½" rounds
  • 1 tablespoon olive oil
  • ½ teaspoon Italian seasoning
  • ⅓ cup parmesan cheese shredded
  • salt & pepper to taste


  • Preheat oven to 425 ° F.
  • Put zucchini slices with olive oil, seasoning, salt and pepper and about 2 tablespoons of Parmesan cheese.
  • Place on a baking sheet and top with the remaining Parmesan cheese.
  • Bake 5 minutes.
  • Turn the oven into the broil, place the pan near the top and cook for 3-5 minutes or until the cheese has melted and the zucchini becomes tender crisp.

How to Bake Zucchini

Zucchini is very easy to overcook, I always set a timer while it is roasting. The thicker you cut your zucchini, the more crisp it will be when you bake it.

The zucchini is best baked at high temperatures for a short period of time, which allows it to caramelize slightly (which adds flavor) without being too mushy. In this recipe, baked zucchini will only be in the oven for 8–10 minutes, including the broil section to roast to perfection!

If you're grilling some steak or meat, change this recipe by grinding your zucchini on the barbecue (tastes amazing, I might add), and adding your cheese afterwards. The taste of grilled zucchini goes perfectly with steak and a pasta salad!
