Garlic Butter Sauteed Zucchini Instant Recipe

Sauteed zucchini is an instant and healthy dish. It is very tasty. I love this version with zucchini cooked with garlic, butter, sauce with minced garlic, salt and pepper. All you need is cooking time, and it's time to eat!

  • 1/4 pound chopped zucchini (2 medium)
  • 1 tablespoon butter
  • 1 tbsp garlic (3 cloves)
  • 1 scallion, finely chopped
  • 1/4 cup fresh grated Parmesan or Pecino cheese, optional
  • Salt and freshly ground black pepper
  • Fresh lemon juice or red wine vinegar, optional

How To Make Garlic Butter Sauteed Zucchini

Cut the zucchini into rounds, cut it in half moons or cut into pieces. It depends on you how you cut the zucchini.

Melt butter in a wide pan over medium-high heat. Add the zucchini and garlic and cook for 3 to 5 minutes, stirring occasionally until the zucchini is browned.

Season with a pinch of salt and black pepper. Stir in the scallions and cheese, if using. Zucchini is ready, serve with lemon juice.

Tips for pan-fried Zucchini

  • Do not peel the zucchini. The peeled zucchini is not crunchy.
  • Do not use salt before or at the beginning of cooking. Salt extracts water from zucchini. This will make it less crunchy when cooked. Since salt makes things good, but we like to add salt in the end.
  • Cook the zucchini until crisp.

Sautéed zucchini has variations in many possible dishes. Here are a few of our favorites:
  • Before serving, mix it in a little grated parmesan or other type of cheese.
  • Add in some extra crunch with toasted chopped almonds.
  • We love the combination of garlic and butter, but you can use other spices. Try Italian spices, Za’atar spice blend, Cajun seasoning, Indian spice mixes like curry powder, or chili powder.
  • Put the chopped tomatoes with the zucchini and cook until the zucchini becomes crispy-soft and the tomatoes shrink slightly and release some of their juices.
  • Add more protein by adding cooked beans - white beans, chickpeas, and black beans.
